Cajeta (Mexican caramel)
In a search for more things to make with goats milk I came across a few recipes for Cajeta.. What a delicious way to utilize extra milk. I'm not a huge fan of sweets but this form of caramel is light and lovely as far as caramel goes. And it was delicious in our iced coffees this morning!
It is a bit time consuming with lots of time standing at the stove stirring and stirring but worth it. The rich beautiful Cajeta will keep up to three months in the fridge. Use it in your coffee, drizzle over ice-cream, use as a dip for fresh fruit, drizzle over cakes, pies and other desserts, drizzle some over sweet potatoes or cooked carrots.. Its has a delicious non heavy sweetness.
Cajeta recipe
2 quarts goats milk
2 cups sugar
1 whole cinnamon stick
1 t kosher salt
2 teaspoons vanilla or better use a whole vanilla bean
1 t baking soda
Add all ingredients in a stainless sauce pan. bring up to bubbling and keep frothing while continually stirring for 45 min to 1 hour until it turns a rich brown and starts to thicken. Be sure to stir continually so that it does not scorch on the bottom of the pan. Poor into a sterilized quart jar. Two quarts of milk produced a little less than one quart of delicious caramel... Enjoy!
